Weekly Menu | 9.29.14

Here's what's on my menu this week.....

The hubs won't be home for dinner a few days, so going a bit light on the plan this week.

ItalianChopped Salad by Danielle Walker's Against all Grain

This was on my plan a couple weeks ago, but never got around to making it!

Weekly Menu | 9.14.14

What's for dinner at your house this week? Do you plan it all out in advance or just wing it?

I'm a big meal planner, although I usually allow for a whim to hit as well.

Here's what's on my dinner menu this week (in no particular order)....

I love zoodles (zucchini noodles) and this sauce sounds delish and filling!

A lchf and atkins friendly meatball recipe from Mellissa Sevigny of I Breathe Im Hungry

She had me at bahn mi.. like all her recipes I know this will be amazing! Hubs will eat this with some brown rice. My boys will probably have plain meatballs.

Sounds rich and yummy! Will serve with a big ol' salad.

A salad without lots of "stuff" is just not right in my book! Okay there are times a simple salad will suffice, but for the most part, I will pull a full on Elaine on the salad situation.

That will probably be it for recipes... I'm leaving a couple spots open for leftovers and if there aren't any, then I'll fill it with a "grill day".

Recipe: Garlic Ginger "Cream" Sauce

Today went a little something like this....

"I got this!"

"....But.... I could really go for something sweet."

"I think I really neeeed something sweet!"

"NO. you don't!"

"Ugh, fine... I'll drink some delicious water...nom nom nom."

Yup, weird internal dialog lives here. :P

Those purty thangs went along with a lovely salmon with garlic ginger "cream" sauce I made for dinner.... very yum... so much so that I failed to talk a photo of it! *gasp*

Here's the recipe for the (photoless, yet delicious) sauce...

Garlic Ginger "Cream" Sauce
olive oil
1 clove garlic (sliced)
1 thumb-sized bit of ginger (sliced)
1/2 c coconut cream (from the top of canned coconut milk)
black pepper/pink sea salt

In a small pan, throw in a bit of EVOO and add in your garlic and ginger. Let those heat up a bit over medium heat. Then add in the coconut cream and continue cooking, so it can reduce a bit. Then turn off the heat and add in some cracked pepper and sea salt.

If you want to be all fancy, you could pick out the garlic and ginger (that's why I leave them BIG!), or you can just spoon it out carefully.

This sauce wasn't super strong, but was a perfect balance with the salmon.
